Would you be able to see the change in a mirror
Depending on your skill level you may or may not. I have been doing glamour spells for years now and yet I have never seen it in the mirror for myself; others have told me my eyes are X color when I know they are not though (including 'the prettiest shade of purple-blue').
I have heard others get used to the magic though and can see past what they know to be true.
Outsiders are your best bet for knowing if it worked.
What if u want to know what they look like but u don't want to seem weird to ppl for asking something u should know?
"Okay, my friend and I are arguing about what color, exactly, my eyes are. What color do you think they are?"
